Pesto Sauce
3 1/2 cups chopped fresh basil
1 cup chopped fresh parsley (remove stems)
1 cup olive oil
2 Tbsp pine nuts
5 cloves garlic, minced
1 1/2cups grated Parmesan cheese
1 Tbsp black pepper
- Puree basil, parsley, oil, nuts and garlic in blender.
- Transfer to a bowl and add cheese and pepper.ย Stir together and let sit a few hours at room temp.
Tropical Salsa
This is good alone with chips but can also be served over seafood like scallops.
1/2 cup diced fresh pineapple
1/2 cup diced fresh mango
1/2 cup peeled and diced cucumber
1/2 cup diced red bell pepper
3 Tablespoons chopped fresh cilantro
4 teaspoons fresh limes juice
OPTIONAL: 1 jalapeno pepper, seeded and minced
Combine all ingredients.ย Season with salt and pepper.
Caesar Salad Dressing
2 lemons, juiced
5 cloves garlic, minced
2 tsp Dijon mustard
1 1/2cups olive oil
1/4 cup red wine vinegar
1 1/2 Tbsp Worcestershire sauce
2 cups shredded Romano Parmesan
pepper
- In the blender, combine lemon juice, garlic, mustard, olive oil, vinegar, Worcestershire sauce, and cheese. Add pepper to taste.
